Ingredients:
- 1 1lb box of Mrs. T's Mini Classic Cheddar Pierogies
- 1 tablespoon olive oil
- 1 pound ground beef
- 1, 1oz packet of taco seasoning
- 1/2 cup of red salsa of choice
- 1, 15oz can of black beans, rinsed and drained
- 1, 11oz can of sweet corn, rinsed and drained
- 1 cup shredded cheddar or Mexican blend cheese
- Toppings of choice such as: diced tomatoes, cilantro, salsa, shredded lettuce, sour cream, black olives, etc.
Directions
- Cook Mrs. T's Mini Classic Cheddar Pierogies with olive oil in a skillet on the stovetop per package direction (approximately 8 minutes per side) until golden brown.Remove cooked pierogies from the pan and set aside.
- Brown the beef in the same skillet until no pink remains (approximately 7-10 minutes).
- When the beef is almost done cooking, preheat your oven to it's broil setting.
- Remove any fat, then stir in the salsa and taco seasoning until well combined.
- Add the black beans, corn, and half of the cheese to the skillet and stir to distribute throughout the beef mixture.
- Spread half of the beef mixture into an even layer on the bottom of an 8x8 baking dish.
- Layer half of the pierogies over the beef mixture.
- Add the remaining beef mixture over the pierogies and spread into an even layer.
- Top with the remaining pierogies and sprinkle with the remaining cheese.
- Place the baking dish in the oven on the broil setting to melt the cheese (approximately 2 minutes).
- Serve with your favorite toppings and enjoy!
