- 1 1lb box of Mrs. T’s Garlic & Parmesan Pierogies
- 2 cups kale, chopped
- 1 clove of garlic
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1/2 cup raw cashews
- Salt
- Parmesan cheese, freshly grated
- Fresh parsley, chopped
Directions
- In a food processor pulse together the kale, garlic, olive oil, and lemon juice until smooth.
- Add the cashews and pulse together until the cashews are ground to desired consistency. Add salt to taste.
- Boil pierogies according to the package instructions.
- Drain pierogies and toss with kale pesto.
- Garnish with parmesan cheese and parsley if desired.
