Ingredients:
- 2 1lb boxes of Mrs. T's Mini 4 Cheese Medley Pierogies
- 1/2 cup frozen carrots
- 1/2 cup frozen cauliflower
- 1 cup low-sodium vegetable broth
- 2 tbsp salted butter
- 2 tbsp flour
- 1 cup whole milk
- 1 cup sharp cheddar cheese, shredded
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions
- Microwave frozen cauliflower and carrots in a microwave-safe dish for 4 minutes.
- Let the vegetables slightly cool and then combine them with vegetable broth in a blender until completely smooth.
- In a pan on medium low heat, add butter. When the butter is melted, stir in flour and combine until it forms a roux.
- Pour in whole milk, the blended vegetable mixture, cheddar cheese, salt, and pepper and stir until combined. Simmer for 1-2 minutes until the cheese sauce slightly thickens.
- Boil 4 quarts of water. Add frozen pierogies and return to a boil. Cook for 3 minutes. Drain pierogies and then combine with cheese sauce.
