Mini Pierogy Fried Rice

Ingredients

  • 1 box Mini Classic Cheddar or your favorite variety of Mrs. T's® Mini Pierogies
  • 2 tablespoons butter
  • 2 scallions, sliced
  • 2 garlic cloves, minced
  • 1 onion, diced
  • 2 tablespoons vegetable oil
  • 3 eggs, beaten
  • 1 cup diced ham
  • 4 tablespoons soy sauce
  • 2 teaspoons sugar
  • 1 teaspoon sesame oil

Directions

  1. Sauté pierogies as directed on package; remove to bowl.
  2. In the same skillet over medium-high heat in 2 tablespoons butter, cook scallions, garlic and onion until tender, stirring occasionally. With slotted spoon, remove to bowl with pierogies.
  3. In same skillet over high heat, in 2 tablespoons vegetable oil, cook eggs until just scrambled, stirring quickly and constantly. Reduce heat to medium; return pierogy mixture to skillet.
  4. Add ham, soy sauce, sugar and sesame oil. Continue cooking, stirring frequently until heated through.
