Ingredients
- 1 box Mini Classic Cheddar or your favorite variety of Mrs. T's® Mini Pierogies
- 2 tablespoons butter
- 2 scallions, sliced
- 2 garlic cloves, minced
- 1 onion, diced
- 2 tablespoons vegetable oil
- 3 eggs, beaten
- 1 cup diced ham
- 4 tablespoons soy sauce
- 2 teaspoons sugar
- 1 teaspoon sesame oil
Directions
- Sauté pierogies as directed on package; remove to bowl.
- In the same skillet over medium-high heat in 2 tablespoons butter, cook scallions, garlic and onion until tender, stirring occasionally. With slotted spoon, remove to bowl with pierogies.
- In same skillet over high heat, in 2 tablespoons vegetable oil, cook eggs until just scrambled, stirring quickly and constantly. Reduce heat to medium; return pierogy mixture to skillet.
- Add ham, soy sauce, sugar and sesame oil. Continue cooking, stirring frequently until heated through.
