Viral Pink Pierogy Pasta

Ingredients

Ingredients:
  • (16-ounce) package Mrs.T’s Mini Pierogies 4 Cheese Medley
  • 1 small beet, boiled and skin removed
  • 2 tablespoons sour cream
  • ¼ cup heavy cream
  • Salt and pepper to taste
  • 2 garlic cloves
  • 1 tsp onion powder
  • 1 tablespoon lemon juice
  • Pistachios
  • Fresh basil
  • Fresh parmesan

Directions

  1. Boil water
  2. Put beets in boiling water
  3. Peel and chop beets
  4. Blend beets, heavy cream, sour cream, lemon juice, salt and pepper, and onion powder
  5. Boil water
  6. Boil pierogies for three minutes
  7. Drain pierogies
  8. Add sauce to pierogies and mix
  9. Top with parmesan, chives, pistachios, and basil
